【秋食學問】有蜜糖的BBQ就是秋天的味道

BBQ塗蜜糖減熱氣?
堅秋:「聽說燒烤時在食物上塗蜜糖,可以減輕熱氣,感覺滋潤一點,是真的嗎?」

CheckCheckCin:燒烤是秋日最受歡迎活動之一,蜜糖是燒烤必備的調味料,大家喜歡無論燒肉、丸甚至麵包都會塗抹一層厚厚的蜜糖,從中醫角度來看,蜂蜜的確是潤燥的恩物,但無助於減輕燒烤產生的熱氣,況且大家燒烤時常用的「蜜糖」,一般只是糖漿,未必真正有蜂蜜成份啊!所以塗蜜糖純綷是味覺上的享受。
秋天天氣乾燥,加上坐在火爐旁邊以及進食燒烤食物的「燥熱」邪氣,會令身體津液被抽乾,所以燒烤過後常常出現喉嚨痛、聲沙、乾咳、大便乾結等燥熱症狀。
想享受燒烤的樂趣,同時減少燥邪的影響,可以注意燒烤時多走動,不要長時間坐在火爐旁邊。燒烤時飲用自煮的菊花雪梨水,或者燒烤後適量進食腐竹蓮子白果糖水或者綠豆邊清心丸,都有助減低燥熱情況。

菊花雪梨蜂蜜水
功效:清熱降火,滋潤肺燥,紓緩喉嚨痛、乾咳等燥熱症狀
材料:杭菊花15-20朵、雪梨2個,蜂蜜適量
做法:
1. 材料洗淨,雪梨去芯切件備用。
2. 鍋中加入800-1000毫升水及雪梨,以武火煮至水滾,然後調文火煮約40分鐘,加入杭菊花煮15-20分鐘,加入適量蜂蜜即可。

Some people say adding honey to your BBQ meat can reduce the heat and it feels more nourishing, it is true?

From Chinese medicine perspective, honey can relieve dryness, but it does not reduce the amount of heat generated in the body from barbequing. Most common honey used in barbeques are mostly just syrup and not real honey. So brushing on honey is just an addition to the flavour.
Autumn is a dry season and you are exposed to dry heat pathogen sitting by the barbeque pit heating up food and body fluids get sucked dry. This is why people commonly experience sore throat, coarseness in voice, dry cough or dry stool after barbequing.
To ensure barbeque and reduce effects of pathogens, remember to move around more during barbeque and do not just sit by the pit. Try to have some homemade chrysanthemum tea with pear.
Honey water with chrysanthemum and pears
Effects: clears heat, nourishes the lungs and relieves dryness. Alleviate symptoms of dry heat such as sore throat and dry cough.
Ingredients: 15-20 hangzhou chrysanthemum, 2 pears, appropriate amounts of honey
Preparation:
1. Rinse all ingredients thoroughly. Core pear and cut into pieces.
2. Add 800-1000ml of water into pot and add in pears. Cook on high heat until boiling, then turn to low heat and simmer for 40 minutes. Add in chrysanthemum and cook for 15-20 minutes. Add honey to taste.
